Raisin Chocolate Chip Bars

"I found this recipe at VegKitchen.com. I like that it gives you the option of using your choice of 3 different types of healthful flours: kamut, whole wheat or spelt. It's also quite low-fat if you use low-fat milk & yogurt or go with the vegan option of applesauce & soymilk."

  • Preheat oven to 350°F and lightly oil a 8x13 pan.
  • Mix the dry ingredients (flour, powder, soda, sugar) in a large bowl.
  • In a seperate medium bowl mix together the wet ingredients (yogurt/applesauce, milk, oil and vanilla) Mix the dry ingredients with the wet until just combined.
  • In a small bowl (or use your now-empty medium bowl that contained your wet ingredients) stir together chocolate chips, raisins and walnuts, if using.
  • Pour half the batter into the pan, then sprinkle over the chocolate chip-raisin mixture.
  • Pour the rest of the batter on top, smoothing with a spatula if needed.
  • Bake for 25-30 minutes or until cake is golden and a toothpick comes out clean.
  • For Vegan use applesauce and soy milk.

  1. Chocolate and raisins are so yummy together in these healthy bars. I used kamut flour, milk and fat-free vanilla yogurt. Wish I had read the reviews, though. It was nearly impossible to get half of the dough spread into a 9x13 pan, so I tried a 9-inch square dish and had to reduce the chip mixture by half since there was so much of it. An 11x7 would probably work very well and I'll try that next time. Think I'd prefer whole wheat pastry flour in these, and look forward to trying with applesauce as well. Thanks for sharing the recipe!
     
  2. I liked these quite a bit. I added 1/2 tsp. salt, because I don't believe in baking without salt. I also used 1 cup of oats and 1-1/2 cups of whole wheat pastry flour, as I like the texture oats give. But I found that an 8X13 pan would be much too large, a 7X11 pan worked perfectly. WIll definitely be making these again, thankyou!

  4. Well, while my husband took the kids to soccer someone must have snuck into my house and eaten huge amounts of these. I mean, how else would they all have dissapeared?!? These are divine! I used whole wheat pastry flour and milled cane sugar. There is this nice sweet whole wheat crust with a ribbon of fudgy chocolate and raisins and it is amazing! I recommend eating them warm if you can, because they are fudgier that way. Yum! As I was putting them together I really thought that there were too many chocolate chips and raisins but it worked out beautifully. Oh, and I used skim milk and applesauce. The only yogurt I have is nonfat plain which can give things a bite. I like the addition of the sweetness of the applesauce. Fabulous, fabulous!!
