Raisin Bran Bread

"Discovered this recipe when I first started cooking and collecting recipes in junior high school. A nice light quick bread with a sweet crunchy topping."

  • Preheat oven to 325.
  • Grease bottom only of a 9x5x3-inch loaf pan.
  • TOPPING--------.
  • In a small bowl, combine oatmeal, brown sugar, and butter mixing till crumbly; set aside.
  • BATTER---------.
  • In a large bowl mix together flour, oatmeal, bran cereal, baking powder, salt, cinnamon, and brown sugar.
  • Stir in milk, eggs, and oil; mixing just to moisten.
  • Fold in raisins.
  • Spoon into prepared pan.
  • Sprinkle evenly with topping.
  • Bake for 1 hour and 15 to 20 minutes or until toothpick inserted in center comes out clean.
  • Cool on rack 10 minutes.
  • Remove from pan.
  • Cool completely.

  1. This was a hit with the folks at work, but I have comments in two areas. Ingredients: I used applesauce instead of the oil, to cut down on calories. I also didn't put the topping on. On the raisins, one cup is plenty. Preparation: Most recipes using oats and/or bran cereal call for soaking them in the milk for awhile before mixing, to soften them. I followed the directions here and got little polka dots of unbaked oat pieces all through the loaves. Here's what I would suggest for mixing. "Combine milk, eggs and oil (or applesauce). Add brown sugar and stir to dissolve. (Lumps less than adding it to the flour.) Stir in oats and cereal and let stand for about 10 min." Otherwise, prepare as per recipe. I used two one-lb. pans (7 3/8x3 5/8), which bake for 35-40 minutes.

I let the batter sit for probably an hour in the fridge. I also used applesauce instead of oil. Thanks for the recipe!
