Rainbow Fruit Salad

"I love this in the Summer when all of the fruit can be bought at the Farmer's Market! Grocery store fruit just doesn't compare. We had this on the 4th of July and it was nice serving a cool,fresh salad."

  • Use a melon baller to hollow out watermelon and cantaloupe into a large bowl.
  • Add drained pineapple, blueberries, plums, green and purple grapes to the bowl with the melons.
  • Gently mix all fruit together and serve.
  • To make it extra special,use the hollow half of the watermelon rind to serve the salad in cutting the edges in a zig-zag pattern.

  1. Delicious and pretty fruit salad which we enjoyed with grilled salmon. I made a slightly smaller fruit salad by using 1 personal size watermelon, 1/2 a cantaloupe, 20 oz pineapple, 1 container (I think it may have been less than a pint) blueberries, 4 plums, and 1 cup green grapes. Wonderful! This was also great served over vanilla ice cream -- and if there is any left for breakfast with yogurt. Made for Healthy Choices Tag.
