I was looking for a meat-free, cilantro-containing black-eyed pea recipe, and this one really hit the spot! The only thing I did differently was to add the salt, cilantro, and lime juice a bit later than called for, towards the end of cooking. I served the beans with a hearty homemade bread, which made for a great combination.
Delicious!!!!! I made these exactly as directed, and they taste fabulous, DH and I loved these, and in fact I had enough (I made the whole recipe) to allow me to have them for my office lunch for a day or so, enjoying them with rice, I have to say I'm very glad to have tried this recipe, and will make them again. I would add more lime juice next time, personal taste, I love my citrus. I did have to add a bit more stock after a while, this could just be due to higher altitude/wonky stove/any number of things.
