  • Cook onion and celery; add cumin & garlic. Stir in spinach, tomatoes, beans, quinoa, carrots and 2 cups water. Cook until quinoa is tender. Add 1 cup cheese.
  • Preheat oven to 350°F Fill each pepper with mixture, cover with foil and cook 1 hour. Uncover, sprinkle with remaining cheese and bake 15 minutes.
