Nice, and healthier alternative to risotto. This made an excellent side dish for Chicken Saltimbocca.

  1. Rinse Quinoa.
  2. Boil water and salt with herbs and garlic.
  3. once water has boiled place quinoa in the boiling water.
  4. reduce heat to low and cover.
  5. once the water has reduced by half place the onion, pepper, and olive oil and cover.
  6. once all water has been absorbed add the parsley and cover off heat and let stand until your meal is ready.
