  • Cook the quinoa according to pack instructions.
  • Drain well then toss with the oil, vinegar, garlic and cumin while still warm and season.
  • Toss through the rest of the ingredients and serve.

  1. I love it! Cooked in vegetable broth, added 1 diced tomato and only used 1 Tbsp each of vinegar and oil. Easy to make, colorful, healthy and delicious!
     
  2. Surprisingly delicious!! I used red quinoa and toasted it in a dry skillet over medium heat for 5 minutes. Then I cooked it in broth rather than water. It was just as good leftover for lunch. This is one to make again and again.

I live in Manchester, UK with my fiance and young son. I work at the local hospital in pediatrics and love my job. I also love cooking!! I have a sweet tooth but try and make healthy family meals, I'm not against some lovely treats now and then though :)
