  • Preheat oven to 400 degrees and grease a loaf pan.
  • steam broccoli until soft.
  • In a mixing bowl, combine all the ingredients + broccoli. Mix well.
  • Pour mixture into loaf pan and cook for 40 minutes.
  • Remove and slice.
  • Top with pasta sauce and enjoy!

  1. I made this exactly as directed but I felt it was a little bland. I thought the salsa and hummus would be enough flavor but it wasn't quite enough for me. I would recommend adding salt and cumin at the least. Maybe more salsa? I think it was OK but not something I would make again.
