Basic delicious Quinoa Cakes. I add a cup of frozen peas to the mix and use 4 eggs when I do that. I got the recipe from Delish.

  1. Combine quinoa, salt, smoked paprika, cumin, oregano and 2 eggs. You should have a dough like mixture, if not add another egg.
  2. Heat a large skillet or large griddle over medium high heat.
  3. Lightly oil skillet with vegetable oil.
  4. Make a 1/4 inch patty out of 1/4 cup of the quinoa mixture.
  5. Place on griddle/skillet.
  6. Repeat to make 7 more patties.
  7. Cook for 3 minutes on each side, until golden brown.
  8. Remove from heat and sprinkle with salt and pepper to taste.
