5-Ingredient Fix Contest Entry. Being that I am gluten intolerant, I am always looking for alternatives to traditional recipes. I keep on hand assorted vegetables I roast so they are on hand when I need them for cooking. The advantage of this recipe is that the vegetable part can be whatever you like!

Ingredients Nutrition

  • 1 12 cups Simply Potatoes® Shredded Hash Browns
  • 1 12 cups roasted vegetables
  • 1 12 cups shredded gruyere cheese
  • 1 cup half-and-half
  • 4 large eggs


  1. Toss hashbrowns with a little olive oil and press into 9 " pie pan.
  2. Take half the shredded cheese and place over hashbrowns.
  3. Next place roasted veggies over cheese.
  4. Top with remaining cheese.
  5. In blender mix 4 eggs with 1 cup half and half.
  6. Season to taste.
  7. Mix till combined.
  8. Slowly pour over ingredients in pie pan.
  9. Bake in 350 degree oven for 45 minutes.
