I make something very similar to this. I like to quarter a tomatoe or two, put a little olive oil on it, sprinkle it with salt, pepper (and what ever else I'm in the mood to try) and roast them. I love the taste of the roasted tomatoes with the spinach and eggs.

Im new to the dieting scene and I have been trying to find healthy quick and easy recipes to make and I stumbled across this one....AWESOME!! So fast and easy and tastes great! I made it exactly as the recipe stated only I cooked it for 2 minutes total. I plan to add a few things next time I make it like others suggested in the reviews! Thanks for the great recipe!!

Working great for me. I used spinach and bell pepper with egg whites and then found Santa Barbara salsa (Costco) with spinach was even better with the egg whites. Admittedly I didn't get to ever trying the microwave method, just sauted them up in a small skillet with a little pam and poured in the egg whites. Been going on a 2 week sprint with these for breakfast.

delicious and easy, my 8 year old daughter even loved it. I'm with you, gotta have a little fat in my cheese! 2 minutes was a little long in my microwave, let alone the extra minute. Next time I'll either cook at 50% or for just 1 minute. Thanks for sharing :)

Loved it! I slept late this morning, so I was going to leave it until tomorrow to try, but then decided to do it anyway. It took no time at all to prepare, and I was able to go to work with a full tummy, after eating something healthy and delicious! I'll definately be making this one again. [Made for Fall 08 PAC]

I have made this several times now, but never had time to photograph it until yesterday. I love it with some cracked black pepper and a generous sprinkle of dried chilli flakes!

This is a wonderful recipe! I finally found an excellent, low carb, low fat and super fast breakfast. I have been eating this every morning for two weeks and I'm still not tired of it. I pre-chop enough spinach for the week, use the pre-packaged egg whites in the carton and publix brand reduced fat sharp chedder. Delicious breakfast in two minutes!

A quick, easy and great tasting dish. I made it according to directions, but a added Veggie salt, onion/garlic powder and black pepper. It was fantastic! Next time I will added crumbled turkey bacon on top. Loved it!

This is so easy to make! My favorite variation is to top it off with Phase-1 friendly taco filling (I know it sounds weird, but this recipe really is *incredibly* versatile!) Thanks! I get tired of those egg muffins, too, sometimes!

My DW and I just started South Beach today, and this was our first breakfast. I made it exactly as directed except I made it on the stove in a saute pan. Very easy and quick! Thanks for helping us get started easily!

Fast, easy and delicious. I used Sargento's Chipotle Chedder cheese and threw in some chives and it was great. Thanks for they great recipe.

I used whole eggs, not just whites and topped my finished creation with some diced tomatoes and onions for added flavor. This was a hearty breakfast that was sure to fuel my entire morning.

This was easy and tasted great for a "diet" recipe! I used egg beaters instead of egg whites and added crumbled morningstar farms veggie sausage. I always hated the way eggs turned out in the microwave until I read this recipe and learned that ya gotta stir it halfway through. That made all the difference. I topped the egg mixture with parmesan cheese and it made for a tasty and quick breakfast. Thanks!
