Quick Very Simple Roasted Tomatoes

I got this recipe from a low-sodium newsletter I subscribe to. If you don't have to watch your sodium intake, add a little salt if you want to.


  1. Heat oven to 400°F
  2. Spray tomatoes with nonstick spray and place in a ziplock plastic bag. Add the garlic powder and basil and shake the bag to mix with the tomatoes.
  3. Place tomatoes on a spray-coated baking sheet or roasting pan and roast 5-10 minutes until skins begin to pop.

Recipes just don’t come much easier than this! Or any more delicious! Use tomatoes that you know you can trust for flavour and with the classic complement of basil, you just can’t go wrong! Scrumptious warm and at room temperature. And SO low in calories and in fat. It’s recipes like this that make cutting back on fat such a breeze! I’ll be making this often, to serve as a side dish, and to serve (at room temperature) with salads. Being so low in fat, it is also a great dish to serve with dishes that are perhaps a little higher in fat than you’d like! I made mine with 3 cloves of minced garlic rather than the garlic powder.
