Quick-Toss Fruit Slaw

Another recipe from my Publix Grocery "Greenwise" magazine. Easy to make and great for diabetics watching their carbohydrate intake. Use pre-package cole-slaw mix or shred your own. This might also be good using brocolli slaw mix.

This is certainly a great new way for making slaw, at least in my kitchen, & I pretty much followed the recipe, although I used 1 large apple (mostly for the crunch) & increased the amount of dried fruit (which included a good amount of dried Fuji apple chunks) to almost 2 cups! We'd be most happy to have this slaw served again & again in the coming months! Thanks for sharing the recipe! [Made & reviewed in Healthy Choices ABC tag]

Ingredients Nutrition

  • 4 cups shredded cabbage, with carrot mix (pre-packaged coleslaw mix)
  • 1 cup shredded red cabbage
  • 2 medium organic apples, cored and coarsely chopped
  • 34 cup dried fruit, mixed (cranberries, raisins, pineapple, etc)
  • 14 cup chopped pecans, toasted
  • 1 (6 ounce) cartonorganic low-fat vanilla yogurt
  • 18 teaspoon ground nutmeg

Directions

  1. Toss together cabbage mixture, red cabbage, apples, dried-fruit bits, and pecans in a large mixing bowl.
  2. For dressing, combine yogurt and nutmeg. Pour dressing over apple mixture; toss to coat.
  3. Serve immediately or cover and chill for up to 8 hours.
