Quick Strawberry Pie

"Strawberry season's here so I thought I'd share one of my favorite strawberry dessert recipes. Prep time does not include time required to set."

  • For the crust : Mix the crushed biscuits, butter and sugar and press the mixture into a 20 cm diameter loose bottom tin. Place in the refrigerator until firm.
  • For the filling: Dissolve the Jell-O in 2 cups of boiling water and pour the hot mixture over the ice-cream in a large mixing bowl. Place the bowl over ice.
  • Add the lemon juice and sugar and beat continuously until light and fluffy.Add the sliced strawberries.
  • Pour the Jell-O and ice-cream mixture over the set crust. Put to set in the refigerator until firm.
  • When set, remove from tin and decorate with sweetened cream and fresh strawberries.
  • Serve cold.

  1. OMG! I have been looking for this recipe for years. My Grandmother used to make this during the summer, but used soft ladyfingers for the crust by lining a springform pan with them. It is light, sweet and absolutely delicious. I encourage you to try it! Thanks for the memories.
