When you're in a fix for some tasty cooked carrots, this recipe is there for you.
- 1 cup baby carrots
- 1 tablespoon water
- 2 teaspoons orange juice
- 2 teaspoons honey
- 1 dash ground ginger
- Put baby carrots in an open glass container with the water.
- Microwave on high for 3 to 5 minutes until tender.
- Drain and toss with orange juice, honey and ginger.
I modified it a little by cooking 1 cup of water and a 1/2 tea of chicken broth with the carrots on top of the stove for about 15 min. Then I added the honey and several dashes of ginger. Stirred the mix and let sit with a lid for 5 min. It was very good.
I did up the water a little, these carrots were perfect, a lovely sidedish to any meal. Always good to have no-fuss meals after a long day at work! Thank you, BBHB, lovely recipe, made for PAC Fall 2012
I needed a quick vegetable dish with my dinner one evening, and this was perfect. Great tasting, and so easy to put together. The only change I would make would be to cover the container while microwaving because my water boiled away and the carrots were a little dry.
