Quick, Simple & Good Banana, Cinnamon Oat Bran Muffins

"This receipe is one I created to fill my need for something good and quick for breakfast. It makes a good snack during the day also. I eat two for breakfast every morning and they are even better the second day after baking. Can keep on the shelf for 5 days. Probably can be refrigerated or frozen but haven't done so."

  • In medium mixing bowl mix brown sugar, oat bran, baking soda, baking powder, salt and ground cinnamon.
  • In blender put bananas and liquify, add egg, melted margarine, & honey liquefying as needed after each addition. to mix well.
  • Pour mixture from blender over dry ingredients and mix well with spatula.
  • Put 1/4 dry cup measure in each Paper baking cup.
  • Bake at 350 degrees for 25 minutes.
  • Remove to rack to cool and store in covered container.

Retired, Mother of 4, Grandmother of 8. When I am in the mood I like to try new recipes. Also love to plant and tend to flower gardens, vegetables & strawberries. Like to read Christian books in my spare time. My pet peeve at the moment are people who drop pets. We have 2 cats and got another one last night. Why do people do this? My favorite place to eat is Clifty Inn, in Madison, IN. The view is spectacular and the food is great. I love to make homemade noodles and dumplings with chicken.
