A nice way to get around the usual requirement of yeast for this bread. This was taken a long time ago from a community or restaurant cookbook. My coworkers liked this bread alot.
- 2 eggs, separated
- 118.29 ml white sugar
- 473.18 ml white flour
- 14.79 ml baking powder
- 2.46 ml salt
- 177.44 ml milk
- 29.58 ml butter, melted
- 59.14 ml sugar
- Preheat oven to 350 degrees.
- Beat yolks with 1/2 cup sugar. Add flour, baking powder and salt to sugar mixture alternately with milk. Add butter.
- Beat egg whites until stiff; fold into batter.
- Pour into greased loaf pan.
- Sprinkle 1/4 cup sugar on top.
- Bake 40-45 minutes.
This is tasty! The adults in the house liked it, but the toddlers/kids LOVED it. Perhaps because we called it doughnut bread?? My loaf fell in the center which led me to wonder if there is too much baking powder in the recipe but upon reading the other reviews it looks like I'm the only one with that problem so it was probably user error! This was definitely easy to throw together, and I can see how it would be versatile as well. As we were having it for an afternoon snack I added a healthy shake of cinnamon to the batter and to the sugar topping. Delicious! Made for ZWT 8: The Wild Bunch.

This was very nice. I'm giving it a 3 though because it just wasn't anything very special about it. The flavor was okay, the sugared top was nice, the texture was light and interesting..It just isn't something I'd make again. My family isn't really interested in it at all. It was just okay. :-)
