Quick Quesadillas

This is a very quick and easy recipe. It is delicious and the kids think it is great. They can even help--it's so easy.

I had never thought about buttering the tortilla when making a quesadilla and loved the result: tortilla was still soft but had a golden "crustiness" to it. I used 96% fat-free flour tortillas, Smart Balance in place of the butter, fat-free refried beans and stirred in a 4-ounce can of chopped green chilis, then topped with cooked shredded chicken and Kraft Free Shredded Cheddar. YUM!

  1. Butter one side of each tortilla and place one in a skillet, butter side down.
  2. Then layer it with refried beans, the meat and shredded cheese.
  3. Then top it with the second tortilla (BUTTER SIDE UP) and cook until the tortillas are lightly browned.
  4. Use a pizza cutter to cut the quesadilla into 4 to 6 wedges.
  5. Delicious!
