  1. Peel potatoes, if desired.
  2. Cut into 1/2" thick slices.
  3. Melt butter and stir soup mix inches
  4. Layer potatoes in casserole dish and cover each layer with onion butter mixture, ending with butter mix.
  5. Bake covered for 1 hour.

This is very easy and very tasty. I also used a combination of butter and olive oil to equal half the called for amount of melted butter. I never layer anything unless I absolutely have to, so this came out a perfectly tender and tasty and super quick side dish.

What a simple and delicious way to make potatoes! I used 2T butter mixed with 1T olive oil which I found was plenty enough. I did not layer the potatoes and onion butter as indicated but rather mixed everything together to coat the potato slices and then baked it. Thank you for this recipe RJ. I shall make it often.
