Quick 'n Easy Reuben Dip

"Fast and delicious dip "whips up" in no time in the microwave. Even friends who don't like reubens will like this! Couldn't be easier and you probably have most of the ingredients on hand, so it's perfect for unexpected guests. The recipe calls for corned beef, but substitute pastrami if you prefer."

  • In a medium microwave-safe bowl, stir all ingredients until well combined.
  • Heat in microwave oven on high 2 minutes or until dip bubbles, stirring every 30 seconds. You can also cook the dip over low heat on the stovetop, stirring often, until bubbly.
  • Serve with rye bread crisps or crackers.

I'm a transplant from Alabama now living in a St. Louis, MO suburb. After many years as a senior consultant, I had to have major surgery with a long recovery period, which is when I found your site. What a thrill!! I spent many years collecting cook books before losing them all (including my Mom's recipes) in a house fire. I still collect books when I can, but more often I frequent 'Zaar and get the best recipes! I rate the recipes I really love, which is why most of my ratings are high.
