I make this using 1# of chorizo, a 10oz can of Rotel and I leave out the shrimp and peas. It's quick 'n easy and my family really likes this recipe.

Good basic recipe. I added chopped onion, 1/2 chopped jalapeno, cayanne pepper, and about 4 pressed garlic clove to the sausage. I also drained the sausage to remove the excess fat and did not save the drippings. It turned out wonderful.I did this to make it heathier. My boyfriend loved it , and we are having my parents over this week for dinner and preparing it,..as it was his request. Thank you.
