We loved this cornbread. I added some crumbled cooked bacon (4 slices) and about 1/4 cup chopped green bell pepper. DH and I enjoyed this so much it was all we ate for dinner that night. Great Cornbread! True cornbread has no sugar. (With sugar it is called "Jonnycake.") I made two changes - 1. I used olive oil instead of corn oil. 2. I used grated Colby and Monterey Jack cheese instead of the sharp cheddar. I think it would have tasted even better with the cheddar. I cooked it in a cast iron skillet, as recommended. Something about cornbread and cast iron that makes the cornbread taste better. It took me about 30 min. prep. time insted of 5 min.
