This is the easiest, quickest recipe I have for a sweet potatoe side dish. Goes especially well with poultry or baked ham. Great comfort food and a nice change from ordinary mashed potatoes.

Quick and easy prep for a nice side dish. I did find the mashed sweet potatoes to be a bit runny and stirred in a bit of mashed potato flakes to firm them up. I also added a bit of maple syrup to enhance the sweetness. I prepared these the night before, and placed in a greased casserole dish to be reheated in the oven as part of a pork roast lunch for some hungry farm workers. That method worked very well.
