I came up with this one night, when I wanted something yummy, but didn't want to cheat on my diet.
- 1 1⁄2 ounces jello fat-free sugar-free vanilla pudding
- 3 cups 1% low-fat milk
- 1 cup cooked rice
- 1 (8 ounce) container fat-free cool whip
- Mix milk and pudding together in a large mixing bowl. Chill.
- Once pudding is set, mix in rice and Cool Whip.
