This is a family favourite that we have been enjoying for years. It is very quick and easy to prepare. We usually serve it with drop biscuits.
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 stalk celery, diced
- 1 medium carrot, trimmed and diced
- 1 (28 ounce) can crushed tomatoes
- 4 cups chicken broth
- 1 tablespoon basil
- 1 tablespoon fresh parsley leaves
- salt and pepper
- Melt butter and oil in a 2 qt saucepan. Add onion, celery and carrot. Cook over low heat for 10 minutes or until vegetables are soft. Add tomatoes and broth. Bring to a boil. Reduce heat, simmer partially covered for 30 minutes. Stir in remaining ingredients. Serves 6.
