- 1 (16 ounce) package fusilli
- 2 cups cubed cooked chicken
- 1 cup chopped cucumber
- 1 cup chopped yellow bell peppers or 1 cup red bell pepper
- 1 cup chopped tomato
- 3⁄4 cup spicy vegetable juice (Spicy V-8)
- 1⁄4 cup fresh squeezed lemon juice
- 1⁄2 teaspoon fresh ground pepper
- 1⁄4 teaspoon salt
- 2 garlic cloves, minced
- Cook pasta per package directions; drain, rinse with cold water, then drain again.
- Mix pasta and the remaining ingredients; serve immediately.
