  1. Heat oil in large non-stick skillet.
  2. Cook and stir red pepper, onion, and garlic for about 5 minutes, or until red pepper is tender-crisp.
  3. Add broth and turmeric and bring to a boil.
  4. Stir in shrimp, rice, and vegetables.
  5. Reduce heat to low.
  6. Simmer 5 minutes or until broth is absorbed and shrimp turn pink.
