      VERY flavorful, inexpensive and simple! I've made another variation of this with peas in addition to the other veggies. The only thing i did change completely is to fry the spices and veggies...add water to the cooked veggies (aprox 2 cups) then add the noodles and cook until al dente. I have also omitted the garam masala and used cumin, cayenne and turmeric. A number of ways to prepare this! Thank you so much for posting! I think I will be playing with this recipe a lot!!! P.S. Is wonderful with mango pickle

      This was very good, even my picky younger daughter really enjoyed it! I did omit the chili, and put in the garlic and ginger when I added the tomato. I also upped the veggies a bit, and added a finely sliced zucchini. As per your suggestion, I made a small egg omelet and sliced it before adding to the dish at the end, more as garnish, and I didn't use the cheese. This is a versatile, quick and easy dish, definitely an addition to our regular meal plan! Thank you, Deux Petits Chefs, made for Spring PAC 2012
