Easy and refreshing side dish.
- 2 cucumbers, halved and sliced
- 2 onions, halved and sliced
- 1 cup roasted red pepper, dressing (Annie's brand)
- 1 tablespoon extra virgin olive oil
- Heat the olive oil and dressing until boiling.
- Pour over onions, let cool and add cucumbers, salt, and pepper.
