Quick Creamy Vegetable Soup

This really is a good, quick soup which is tasty and pleasing. The recipe calls for using cream of chicken soup but any creamy soup may be used. I like cream of onion or cream of shrimp.

Made this for New Kids on the Block tag game and the recipe states what it really is "quick". I did add some diced onion and minced garlic (DH and I love those) so I sauteed them and the celery a little in butter then followed the rest of the instructions (except that I used chicken both and might use a little cream next time). Very tasty but DH wanted some meat in his so next time I have some chicken left over I will make this again and put in some chicken. I think I might even try the cream of onion soup too! Thank you.

Ingredients Nutrition

  • 1 12 cups water
  • 12 teaspoon salt
  • 1 cup frozen mixed vegetables
  • 14 cup celery, chopped
  • 1 (10 1/2 ounce) can condensed cream of chicken soup


  1. Combine water and salt in a saucepan. You may want to substitute chicken broth for the water.
  2. Add the vegetables and celery and cook 10 minutes.
  3. Blend in the cream of chicken soup or whatever creamy soup you choose.
  4. Reduce heat to simmer and heat 2 to 3 minutes longer.
