Quick Cioppino
"I have been making this for so long, can't recall where it came from. I have a few "more complicated" recipes, but this is SO tasty , SO quickly, that it is the one I make most often."

ingredients
- 44.37 ml olive oil
- 473.18 ml onions, finely chopped
- 2 large garlic cloves, minced
- 9.85 ml fresh rosemary, chopped
- 1.23 ml red pepper flakes, crushed
- 793.78 g can crushed tomatoes in puree
- 2 (453.59 g) bottle clam juice
- 177.44 ml dry white wine
- 340.19 g halibut fillets, cut in 1-inch pieces
- 226.79 g medium shrimp, peeled and deveined
- 226.79 g bay scallop
- 29.57 ml fresh parsley, chopped
directions
- Heat oil in large, heavy pot over medium-high heat.
- Add next 4 ingredients; saute 6 minutes.
- Add tomatoes, clam juice, and wine; bring to boil.
- Reduce heat to medium; simmer 18 minutes, stirring occasionally.
- Add all seafood and 2 tablespoons parsley.
- Simmer until seafood is opaque in center, about 3 minutes.
- Season to taste with salt and pepper.
- Ladle into bowls and sprinkle with parsley.

Wow! I took a few liberties with this recipe. I added muscles and crab claws and used haddock in place of halibut and it came out amazing. I also doubled the red pepper flakes, because I love it spicy!!! Great and fairly easy recipe. Thanks! -
Wonderful!!!! I cut the recipe in half and added some fresh fennel I had left (about a 1/8c chopped) and a little chopped green pepper. I used sea scallops (cut in fourths), shrimp, one cod fillet and one small salmon fillet. I will definately use this again. Thank you for such a easy and delicious recipe. Made for Zaar Chef Alphabet Soup Game 2009. -
I used a combination of this recipe and Rachel Rays oven roasted recipe: As I liked the ingredients of both. I used Haddock, shrimp & muscles also added fennel (1st time I have ever cooked with this and loved it) I will post my combined recipe. served it to guests and they loved it had to give them both copies Easy and wonderful 4.5 stars only because I did use part of another recipe -
Superb! I love cioppino but hard to find in Louisiana without driving 75 miles. I used catfish fillets for the fish, added a few oysters and squid. Ummm, So very good. I may never drive 75 miles again for my cioppinno. Freezes very well so I always have a supply on hand for my craving. Thank you for sharing this ez recipe. -
Yummy! We loved this super quick and easy cioppino. I, too, have more "complicated" cioppino recipes, but for quick and easy this beats them all. I used Basa fillets for the fish because that is what I had on hand. Also, my shrimp and scallops were large so I cut them in half. My family devoured this and gave it 2-thumbs up. Thank you for sharing this wonderful recipe...it is definitely a keeper!

<p>This photo of DH and me was taken on our 50th anniversary, 12/27/08. Both DDs and 2 DGC celebrated with us. <br /><br />DH and I live about 40 miles north of Baltimore, in what WAS rural 40 years ago. We are empty-nesters. Have 2 adult daughters, 2 great SIL, and 3 grandchildren --1 is 22, and 16 year old twins. In September of 2011, we were presented with our first GREAT-grandson ! They all live in PA. and are VERY busy people ! <br /><br />I retired from MANY facets of nursing 12 years ago, and LOVE being in charge of myself ! <br /><br />We had a 4-couple Gourmet Group for so many years, that we ran out of new things and themes. Now we meet at restaurants, to avoid trashing the kitchen as well as the budget. We started with 7 course meals! None of us can DO that anymore !! <br />We have been VERY fortunate to be able to travel more than we ever dreamed !! Have B&B'd in Great Britain many times; visited Italy, Greece, France, Australia, New Zealand, Germany, Switzerland, and Iceland (in February !) We would far rather stay in B&B, or self-catering apartment or dwelling, than be on a tour. Our trip in '09, was to 2 small towns in Sicily --Sant'Alfio, on the slope of Mount Etna, in a 15th century, converted winery --and a week on the north coast near Cefalu. Very few spoke English, but everyone was helpful and we managed to communicate, and had a wonderful time ! (Photos in Gallery on website below !) We returned there in Sept. '11, for a 2 week vinyard tour with a small group, led by our local wine store owner - whose family is still in Sicily ! <br /><br />DH is my photographer - (and a website designer) but he insists on set-up time as well as a hot meal ! I should plan ahead for serving appeal, so he can get the best shot. <br /><br />I am now a SIX year survivor of colon cancer, as of 5/11, and four year of thyroid. Angels on my shoulder found both lesions before I even had symptoms !
