  1. brown ground beef with diced onion, then drain.
  2. mix in all other ingredients except cheese (add salt & pepper if desired).
  3. cover and simmer about 10 minutes or until rice is tender.
  4. remove from heat top with shredded cheese then cover just til cheese is melted.
