Quick Chicken Casserole

"Very fast to mix up and little cook time. Plus you only need 4 ingredients ! I've serve this to guests quite often and I have been asked for the recipe every time!! My sister-in law got this off of the back of a stove top stuffing box."

ingredients

  • 1 cup diced cooked chicken
  • 2 cups frozen mixed vegetables
  • 1 (10 1/2 ounce) can cream of chicken soup, undiluted
  • 1 box Stove Top stuffing mix

directions

  • Mix first 3 ingredients in a bowl.
  • Put into a greased casserole dish.
  • prepare stuffing mix according to package directions.
  • Spread on top of chicken mixture.
  • Bake at 350 degrees for 25 minutes.

  2. I used left over chicken and instead of using mixed vegetables I used frozen peas and thinly sliced fresh carrots. This was super easy and very delicious. Will be making again!

  5. This is my new favorite comfort food. When the weather starts to get seriously cold, I start to think about a chicken pot pie. This reminds me of a chicken pot pie, but it's much easier! I double the recipe, which gives us 4 or 5 hearty servings. I buy a rotisserie chicken, which provides enough for this casserole and another dinner. I use a 12 oz. bag of cubed stuffing and frozen veggies that include broccoli and other larger-cut veggies. I took the advice to raise the temperature to 400 and leave the doubled casserole in the oven for 40-45 minutes to get it heated all the way through. Terrific!

Tweaks

  1. I like to use the boxes of FAMILY size stuffing vs. the regular size. Also instead of using the mixed veggies, I like to keep it simple by using canned corn and green beans. I double the recipie...cook half and freeze the other half! That way, I have a quick and ready dinner just in case I have a lazy day and don't want to cook! It freezes well and it doesn't change the taste at all!
     
  2. I like this because it is so easy to put together. I had to cook it longer than the 25 min though as the stuffing on top was too mushy. It took about 40 min to cook. I also used cr. of mush. soup instead of the chicken which tasted good too.
     
  3. Decent comfort food, I would dare say that this would be a good way to use left over Thanksgiving turkey, by using left over green beans, turkey instead of the chicken and frozen veggies. A little lacking in the taste department, so I added some Cajun spice.
