These were a great quick dinner. I made them just by the recipe except that I threw in about 1/2 can of corn because I had it left over. I doubled the filling and put half of it in a plastic bag in the freezer. My 5 year old liked it, too.
Made this for cinco de mayo- Ole! I combined the ingredients here with the technique from another recipe-- I threw the beans and all the spices (except the cayanne- too much heat for me) into the blender to make a spread...then cooked a large chicken breast and shredded it--Very good lots of flavor-- and realy was fast and easy to prepare.
This was okay. Not as tasty as I had expected. The kids didn't care for it too much. There seemed to be too much chicken and black beans for just 2 quesadillas, so I left some out. It was worth a try but not something I'll be making again.
This was awesome! Hubby made this meal and it was so easy. We skipped the black beans because I didn't have any. But added some chopped bacon and some diced tomato. He had to bake it about 20 min but was well worth the wait! Will be trying this again. Thanks for posting it.
OMG! This was fabulous! Everyone loved it. As another reviewer said, I mashed some of the black beans (excellent idea), and I didn't have seasoned salt, so I didn't use that. I made this in a round, glass, pie plate that my round tortillas fit perfectly. I cooked it in my Cuisinart convection oven for 10 mins. @ 350. I have already put the ingreds. for this on this week's shopping list as everyone is already asking me to make it again. Many thanks, Elizabeth, for this wonderful recipe!
Yum! Used chicken tenders I had in the freezer in place of the canned chicken but only because I'm trying to clean out the freezer for a move! Added the seasonings as they were cooking and they tasted great. Smashed some of the black beans a bit to make them stick better too. A great, tasty, and easy meal.
