Easy with just a few ingredients.The fresh vegetables suggested are carrots, green beans, celery, and tomatoes. Any combination to personal taste.
- 1 cup beef stock
- 1 garlic clove, minced
- 1 cup assorted fresh vegetable
- 1 scallion, minced
- 1 bay leaf
- black pepper, to taste
- 1 tablespoon pearl barley
- In a small saucepan combine the beef stock, garlic and vegetables. scallion, bay leaf, pepper and barley.
- Simmer until barley is tender, about 15 minutes.
Nice easy recipe. I used a vegetarian beef stock and vegetable offcuts [mostly Asian greens] I had sitting in the freezer ready for the stockpot.
