My sister gave me this recipe. I added whole wheat flour, protein powder and fiber powder. So now it's pretty healthy! You can frost it with caramel cream cheese icing which is delicious! But they taste delicious without too and make a great breakfast muffin. Add toasted pecans! Yum.
Spice to your own taste. They freeze well!! If you use that weight loss system that counts points it is only 4 points for a regular sized muffin! :-) Also can be a 9 inch cake.
Directions:
1
Preheat oven to 350.
2
Mix applesauce, brown sugar and oil together thoroughly.
3
Sift all dry ingredients together.
4
Add the applesauce mixture to flour mixture, blend well, spoon into pan.
5
Bake about 30-35 min until cake pulls from side of pan and straw or skewer inserted in center comes clean. While cake is baking, make icing if desired.
6
Can make one - 9 inch cake.
