Quick and Moist Microwave Cake

The name says it all! Buy a cheap bag of brownie mix and keep it in a ziplock in the pantry for this quick and easy dessert. One bag will last you quite a while!

I tried this tonight and it was great. Used milk, not water, and cooked it in a microwave safe ceramic bowl instead of tupperware. Extremely moist and the outside edges were a little underdone, but since no eggs were used, it was safe to eat the gooey, uncooked edges. I topped it with some semi-sweet chocolate chips and some caramel topping. It took longer for it to cool down enough to eat than it did to cook. :)
I think this would go excellently with ice cream... next time. I put the leftover brownie mix in a zipped plastic bag for later use.

  • 4 tablespoons brownie mix
  • 2 tablespoons water (I have had GREAT success with half and half or chocolate milk.) or 2 tablespoons milk (I have had GREAT success with half and half or chocolate milk.)

  1. In 1 cup microwave-safe tupperware dish combine brownie mix and 2 tablespoons water or milk or half and half.
  2. Mix well into a batter; be sure to scrape any dry ingredients from the sides.
  3. Microwave on high for 1 minute.
  4. Cake is done when top is moist , sponge-like and no longer gooey.
  5. If cake is not done after 1 minute, cook an additional 15 to 30 seconds.
  6. Cool your microwave cake; adorn with your favorite dessert toppings.
  7. Enjoy!
