Quick and Easy Pasta Salad

I had never made a pasta salad before, but my girlfriend wanted one for a party, so I threw this together and it turned out amazing. I used italian dressing but next time I might use a sundried tomato dressing. I think that would kick it up a notch. Make sure your pasta water is heavily salted and dont skip on the garlic, it adds a great flavor to the pasta.

Ingredients:

Servings: 4

• 0.5 (16 ounce) box penne pasta
• 2 garlic cloves
• 2 roma tomatoes, chopped
• 1/2 red onion, chopped
• 1 medium cucumber, chopped
• Italian dressing
• parmesan cheese
• salt

Directions:

1. Boil pasta with 2 cloves of smashed garlic in salted water.
2. drain pasta and rinse with cold water to stop the cooking.
3. toss together veggies, dressing, and cheese.
4. salt and pepper to taste.
5. let sit in refergerator for 2 hours prior to serving.
6. the longer it sits the better it is.
7. I added about 1/4 cup dressing and 1/8 cup cheese.
8. you could add more or less depending on your taste.
