Quick and Easy Mini Cinnamon Rolls

This recipe courtesy of Southern Living Magazine, February 2002. It also doubles easily for a crowd.

  1. Unroll crescent rolls, and separate each dough portion along center perforation to form 4 rectangles; press diagonal perforations to seal.
  2. Stir together butter and next 4 ingredients; spread evenly over 1 side of each rectangle.
  3. Roll up jellyroll fashion, starting at long end.
  4. Gently cut each log into 6 (1-inch-thick) slices, using a serrated knife.
  5. Place rolls, 1/4 inch apart, into 2 (8-inch) greased cakepans.
  6. Bake at 375° for 15 to 18 minutes or until golden.
  7. Cool 5 to 10 minutes.
  8. Stir together powdered sugar and remaining ingredients.
  9. Drizzle over warm rolls.
  10. Note: To make slicing easier, place unbaked rolls on baking sheet, and freeze for 10 minutes.

Love this recipe! I like to prepare through step 3, then, wrap each roll in plastic wrap and refrigerate overnight, slice and bake in the morning. Brew a pot of coffee and along with the scent of hot cinnamon rolls baking the family won't need their alarm clocks :)

These were very good, very quick and easy to make. I made a half recipe without the nuts (personal preference). However, when I placed them in the pan, even with 1/2 inch spacing the pan seemed much too huge. So I used a smaller pan--but then they puffed up too much and didn't cook enough even when golden brown on top. So I think the 8 or 9 inch pan is right, but the spacing should be nearer to 1 inch than 1/4 inch. I really don't care for the taste of undercooked dough! :) The cooked parts were very good, though, and my DS just yummed it up exclaiming all the while about how good they were. These were wonderful fresh out of the oven. If you use a dark pan they cook a lot faster. They are a fun, fast cinn. roll.
