Quick and Easy Ham With Sweet Potatoes

- 2 ham steaks
- 59.14 ml brown sugar
- 0.61 ml nutmeg
- 1.23 ml cinnamon
- 226.79 g can crushed pineapple, drained
- 425.24 g can sweet potatoes, drained
- 236.59 ml miniature marshmallow
- 29.57 ml chopped pecans (optional)
directions
- Preheat the oven to 350 degrees F (175 degrees C).
- Tear off two large sheets of aluminum foil and place side-by-side on a cookie sheet. Mix brown sugar, nutmeg and cinnamon together. Place one ham slice onto each piece of foil, and sprinkle brown sugar mixture on both sides. Spread a little bit of the crushed pineapple over the ham, then top with sweet potatoes. Sprinkle a little bit more brown sugar mixture and pineapple over the sweet potatoes. Close the aluminum foil tightly around the ham, and place on a baking sheet.
- Bake for 30 minutes in the preheated oven. Remove from the oven, and carefully open the packets. Sprinkle miniature marshmallows over the top, and return to the oven with the foil open. Bake for another 5 minutes or until marshmallows are soft and slightly melted. If you want the marshmallows really toasty, you could brown them under the broiler until marshmallows are lightly toasted. You will end up with a sweet, juicy ham dish and very few dishes to wash.

<p>Update: I have changed my profile picture in honor of my dear best friend and loyal companion that I lost to cancer on 6/25/11. Maxx was the best dog that anyone could ever hope to have in their life. Until we meet again, sweet boy, you will be forever in my heart and memories. I currently live in the country with two dogs (a 12 pound poodle mix named Suki and a new member to the family, a 7-month old(?) 7.5 pound terrier mix named Angel ). I got Angel from the dog pound a week after I lost my beloved Maxx. Suki and I both needed a new companion to help us cope with our loss. Nothing will ever replace Maxx, but she has helped to uplift Suki's spirit. I am a secretary for a county school board. I love to cook, bake, crochet, paint, sew, read and anything to do with crafts.
