Easy to make and, boy, is it tasty! I made this for the MEP cookathon almost as written. Didn't bother blanching the broccoli since we like it crunchy raw. For the color, I threw in a hand full of grape tomatoes because the red pepper I bought was moldy inside. !!! I'll be making more of MEP's recipes soon.

Loved this! I made it exactly as written other than using two grilled chicken breasts in place of the pre-cooked bagged strips. My DH says this is a keeper. I followed MEP'S posts on Zaar for years and will miss her.

I made this a few days ago for the MEP cookathon. It was so good, though I am going to use fresh broccoli next time. I used frozen, because that is all I had, and I had a craving for this delicious salad. It turned out wonderful, even with the frozen broccoli. Thank you, MEP. You will be missed! I made this again, but I used fresh broccoli and regular pasta. It came out and tasted sooooo much better. I am adding two new photos. Thank you, MEP, for your great recipes and being you! ;)

This is a light and tasty salad. Hearty enough to stand alone. I made this as directed but used my recipe for Texas Ranch Dressing. I used grilled chicken bites, but roasted chicken would have been good too. There are many variations that you could try with this versatile recipe. All the flavors were good together, and the colors appealing. Definately a recipe to keep in your printed cookbook. I made this in memory of The Mepster.

This was, indeed, a quick and easy pasta salad. Made exactly as directed, with the exception of not having the red bell pepper, so I used all green pepper. My rotini pasta I had was also all just plain pasta color and next time I will go with the mixed colored pasta for more eye appeal. The flavor was wonderful and the pasta went over well with the crowd at the homecoming at church......will miss you MEP, but will always be able to keep you in my life with your amazing recipes.

This was easy and quick to fix. I went exactly by the recipe and I didn't want to stop eating it. I also like being able to make it ahead of time. Will definately do this one again.

This made a lovely and delicious salad. I used small shell pasta and an orange pepper. I pretty much stuck to the recipe other than that, although I used homemade ranch dressing. I'm so happy to have discovered such a nice combination of flavors and textures. Thank you very much for sharing this with us.
