I was looking for a donut recipe that I could make for my kids that didn't need yeast or time to rise -- this one fit the bill. I've never made homemade donuts before so I can't compare them to anything but I was really happy with them. They're cake-like donuts, which I wanted. I had to add a full extra cup of flour (increasing total to 4c. flour) in order to get a consistency I could roll. Also, I used a greek-style non-fat yogurt (that's all I had), and I added about 1/4 tsp of cinnamon and about the same amount of fresh nutmeg because I had seen those on other recipes. I ended up with twenty 4-inch donuts and about 30 donut holes. Will definitely make again!!

Ingredients Nutrition

  1. Heat the oil to 375 degrees.
  2. Start by combining the two eggs and sugar.
  3. Wisk until the egg mixture is pail and fluffy.
  4. Add the yogurt, butter and vanilla, wisk briefly.
  5. In a separate bowl, combine the flour, salt, baking powder and soda.
  6. Add the dry ingredients to the wet.
  7. Stir just until ingredients are combined, if you over mix the dough will become tough.
  8. Roll the dough to 1/4 inches thick.
  9. Cut doughnuts as close together as possible. Repeat with the remaining dough.
  10. Fry on each side until golden brown.
  11. Drain the doughnuts on a paper towel.
