I was looking for a donut recipe that I could make for my kids that didn't need yeast or time to rise -- this one fit the bill. I've never made homemade donuts before so I can't compare them to anything but I was really happy with them. They're cake-like donuts, which I wanted. I had to add a full extra cup of flour (increasing total to 4c. flour) in order to get a consistency I could roll. Also, I used a greek-style non-fat yogurt (that's all I had), and I added about 1/4 tsp of cinnamon and about the same amount of fresh nutmeg because I had seen those on other recipes. I ended up with twenty 4-inch donuts and about 30 donut holes. Will definitely make again!!
- 2 eggs
- 3⁄4 cup sugar
- 1 cup yogurt
- 4 tablespoons butter, melted
- 1 tablespoon vanilla
- 2 cups flour
- 3 tablespoons flour
- 2 tablespoons baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- powdered sugar
- oil (for frying)

- Heat the oil to 375 degrees.
- Start by combining the two eggs and sugar.
- Wisk until the egg mixture is pail and fluffy.
- Add the yogurt, butter and vanilla, wisk briefly.
- In a separate bowl, combine the flour, salt, baking powder and soda.
- Add the dry ingredients to the wet.
- Stir just until ingredients are combined, if you over mix the dough will become tough.
- Roll the dough to 1/4 inches thick.
- Cut doughnuts as close together as possible. Repeat with the remaining dough.
- Fry on each side until golden brown.
- Drain the doughnuts on a paper towel.
