Quick and Easy Black Bean Nachos Vegetarian

Very easy yummy, vegetarian nachos with black beans.

Ingredients Nutrition

  • 4 -6 cups tortilla chips (I dont really measure use enough to cover pan)
  • 1 (15 ounce) can black beans (rinsed and drained)
  • 1 (15 ounce) can vegetarian chili (or any chili you desire)
  • 2 teaspoons taco seasoning
  • 2 cups shredded cheddar cheese
  • salsa (to garnish)
  • sour cream (to garnish)

Directions

  1. Pre-heat oven to 350
  2. Put black beans, turkey chili chili and taco seasoning in small sauce pan. Heat until warm.
  3. Spread tortilla chips on cookie sheet.
  4. Spoon bean mixture over chips.
  5. Sprinkle with cheese.
  6. Bake until cheese is melted approixmately 10-15 minutes.
  7. Top with salsa and sour cream.

Filling and delicious! I used leftover Another Vegetarian Chili for the chili and quickly whipped up some fresh pico de gallo for the garnish while the nachos were in the oven. Really tasty! Thanks for sharing! ~PAC Spring '10~
