Quick and Easy Baked Stuffed Eggs With Cheese Sauce

  1. Split eggs lengthwise. Remove yolks and mash.
  2. Saute mushrooms in butter. Add mushrooms and seasonings (sauces)to yolks and mix well.
  3. Stuff into egg white shells and arrange in buttered, shallow casserole dish.
  5. In a large saucepan, combine butter and flour and cook on medium heat just until butter and flour are well mixed.
  6. Add milk slowly and cook, stirring constantly, until mixture is smooth and thick.
  7. Remove from heat, fold in cheese and stir until cheese melts.
  8. Pour cheese sauce over eggs and sprinkle with breadcrumbs.
  9. Bake uncovered at 350 degrees for 20 minutes.

Great light brunch dish! Served with toast. I subbed gouda for the cheddar, since I had to use it up. Worked great. Will be making these again!

I cut this recipe in half for the 2 of us & although I included the mushrooms, I did just saute them only slightly before adding them to the stuffing! I also left out the Tabasco sauce, & I crushed some oven toasted whole grain bread for the breadcrumbs, which, I thought, gave it an additional flavor boost! wow this was good . i used shaved deli ham instead of the mushrooms i thought i had . still good my oven was slow this morning , so at 20 minutes wasnt entirely done so put shredded cheese on top REALLY right choice for last 10 minutes cooking
