Deelish! This has always been a favorite of mine. Since this is a very rich dish, I recommend corn tortillas rather than flour. Yummy! We thought this was exactly as we remembered having it at La Fogata. We served it for company and they were impressed also. I tore up the cheese into several pieces and put in a shallow baking dish - then sprinkled the cooked chorizo on top. Then put in the oven at 325 for about 25 minutes.
