Quick and Easy! I made this for freezer tag and you can make this recipe OAMC by making the enchiladas ahead of time and freezing them. Defrost in microwave or overnight in fridge and then make the sauce to go on top. I used Senor Pico's Picante Sauce for the picante sauce and it worked very well.

This was great. I had a container of queso in the freezer I wanted to use, so I used that for the cheese & picante sauce. Also I used a McCormick Spice packet to season the meat and flour tortillas, cause that's what I had. I topped it with diced tomatoes and it was very filling. Everyone loved it!
