I am blessing you!!! When I lived in Mexico City we would chow on empanadas de flor de calabaza on the same street corner most evenings. This sweet little old lady knew us and made sure we had plenty. This is the filling!!! I know there they used queso fresco. Now I can return to Mexico..... literally... with a smile on my face and empanadas in my tummy. T.J.

Love these! I love squash blossoms- they taste like good spinach. A little more intense like when you reduce something and the flavor is intesified a little. If you like spinach you will like squash blossoms. I used canned which greatly reduced the prep work and canned poblano rajas (strips) and pre made tortillas. Reduced the work and time to about 5 minutes. A big hit here! Thanks NC for another great recipe- can always count on you for those!

WOW! I made two servings of these today for my quesadilla type party. I never used squash blossoms before so I wasnt sure if I would like theses but I sure did. I used left over carmalized onions and home made flour tortillas for the shell. Great recipe! Cant wait to make again when I have masa harina flour! Made for ZWT 3!
