- 1 cup boiling water
- 1 cup dates, chopped
- 1 teaspoon baking soda
- 1 cup sugar
- 4 tablespoons butter, softened
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 1⁄2 cups sifted all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup coconut or 1/2 cup chopped pecans

ICING
- 5 tablespoons light brown sugar
- 5 tablespoons cream
- 2 tablespoons butter
- 1⁄2 cup coconut or 1/2 cup chopped pecans
directions
- Preheat the oven to 350°F; grease a 9-inch square cake pan.
- In a bowl, pour the boiling water over the dates; add the soda and let stand while the remaining ingredients are prepared.
- Cream together the sugar and butter in a large bowl; add the eggs and vanilla; stir in the coconut, flour, baking powder and salt.
- Pour in the date mixture and blend well.
- Pour the batter into the cake pan; bake for 35 minutes or until toothpick inserted in center comes out clean; cool before icing.
- Combine all the ingredients for the icing; bring to a boil and cook, stirring constantly, for 3 minutes. While the icing is still warm, pour over the cooled cake; sprinkle with coconut.
