Tried it for dinner tonight. My only change was using left over chicken (wanted to use it up). Very tasty! Quite a few steps but definitely worth the effort. Will have it again for sure.
This is similar to the recipe my mother has been using for years. I used chicken with the bone still on because it adds more flavor. I also used a pressure cooker instead of a skillet as it really tenderizes the meat and makes the juice more flavorful. Also, I didn't mix everything. Traditionally, the meat is placed under the rice, and the rice piled over in a mound, then the carrots and raisins placed on top. I also used slivered almonds with the raisins and carrots which my brother absolutely loves.
TERRIBLE! We didn't like it at all.
