This is a Filipino recipe that has no wheat flour.
- 2 cups rice flour mochiko sweet rice flour
- 3 teaspoons baking powder
- 1 cup sugar
- 2 cups coconut milk
- 1 cup shredded coconut
- Sift dry ingredients.
- Add coconut milk to dry ingredients.
- Grease ramekins.
- Pour batter inches.
- Put in steamer.
- Cook for 30 minutes.
- Check with toothpick.
- Serve with grated coconut on top.
I followed the recipe except I divided the mixture and flavour 1 portion with screw pine (pandan) and then steam it in layers. Made for ZWT 6.
My kids just love it!!!! It was gone in minutes.
